Recipe for Fresh Cucumber-Avocado Salsa

This fresh salsa makes a delicious dip for whole wheat pita chips, baked tortilla chips, bread sticks, or crudités. Add it to burritos, on top of beans and rice, or with any Spanish-style meal to enhance the dish. You can vary the salsa by adding ½ cup sweet corn (thawed frozen corn works well) with cilantro or basil, or by substituting diced Roma tomatoes for the red pepper. Proportions can easily be adjusted to suit your taste.

Recipe Ingredients

  • 1 cup cucumber, diced
  • 1/4 cup sweet red pepper, diced
  • 2 tablespoons green onion, cut into ¼-inch slices
  • 1-2 teaspoons fresh basil, minced
  • 3/4 teaspoon coarse-grain garlic salt
  • 1/8 teaspoon salt (more if adding corn)
  • 1 1/2 teaspoons fresh lemon juice
  • 1/2 cup avocado, diced

Instructions

  1. Combine cucumber, red pepper, green onion, and basil.
  2. Sprinkle mixture with garlic salt, salt, and lemon juice, mixing lightly.
  3. Carefully fold in diced avocado.
  4. Serve as a dip with crackers, chips, or toasted whole grain baguettes.
