Turkey Taco Bowls

These simple turkey taco bowls are a delicious way to incorporate nourishing ingredients to create a satisfying 30-minute weeknight meal. Prep the salsa, seasoning and turkey ahead of time to build the bowls as needed.

Recipe Ingredients

  • 2 tablespoons chili peppers, ground
  • 1 tablespoon cumin seeds, ground
  • 2 teaspoons garlic powder
  • 2 teaspoons oregano
  • 1 teaspoon coriander seed, ground
  • ½ teaspoons salt
  • ½ teaspoons thyme
  • ¼ teaspoons allspice, ground
  • 1 cup tomatoes, diced
  • 1 fresh jalapeno, minced
  • 3 tablespoons red onion, diced
  • 1 tablespoon cilantro
  • 1 tablespoon lime juice
  • 1 cup yellow onion, chopped
  • 1 cup red bell pepper, chopped
  • 1 tablespoon olive oil
  • ½ tablespoons fresh garlic, chopped
  • 1 pound ground turkey
  • ½ cups chicken broth
  • ½ teaspoons salt
  • ½ teaspoons black pepper
  • ¼ cups fresh cilantro, chopped
  • 3 cups cooked brown rice
  • 6 cups cooked ground turkey (see above)
  • 6 cups lettuce, chopped
  • 6 tablespoons extra sharp low-fat cheddar cheese
  • 6 servings fresh tomato salsa

Instructions

Taco Seasoning

  1. Measure all ingredients and mix in a bowl.

Fresh Tomato Salsa

  1. In a medium bowl, combine all ingredients. Refrigerate until ready to use.

Turkey

  1. Sauté onions and peppers in olive oil. When onions have become translucent, add the garlic and sauté until fragrant.
  2. Add the ground turkey and the taco seasoning. Mix well before adding the chicken broth.
  3. Cook the turkey until almost all the chicken broth has evaporated.
  4. Season with salt and pepper. Fold in cilantro.

Turkey Taco Bowl

  1. Divide the food into six small bowls. Fill each bowl with ½ cup brown rice, followed by ¾ cup ground turkey, cheddar cheese, lettuce and fresh tomato salsa.
