Curry Chicken and Asparagus Sauté

Quick & Easy Chicken Dinner

This wonderful one-pan meal takes less than 20 minutes to make. It features asparagus, which provides a rich source of vitamin K, an important nutrient for blood clotting and bone health. It’s seasoned with curry powder, a great source of the anti-inflammatory bioactive compound called curcumin. Serve over brown rice, quinoa, whole grain noodles or a bed of greens.

Recipe Ingredients

  • 1/4 cup water
  • 3 tablespoons honey
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons all-purpose flour or gluten-free all purpose flour
  • 2 teaspoons curry powder
  • 1 pound boneless, skinless chicken breast or thighs, cut into 1-inch pieces
  • 1 tablespoon avocado oil or ghee
  • 1 pound asparagus, trimmed and sliced into1-inch pieces
  • 2 teaspoons tamari soy sauce
  • 1 teaspoon rice vinegar
  • 1 lime, cut into wedges

Preparation

  1. Combine water, honey, salt, and pepper in a small bowl or measuring cup and stir well. Set aside.
  2. In a medium bowl, whisk together the flour and curry powder. Add the chicken and toss until each piece is coated.
  3. Heat the oil in a medium non-stick skillet over medium-high heat. Add the chicken and cook for 4 to 6 minutes, stirring frequently, until chicken becomes opaque and begins to brown. Add the asparagus and continue to stir until asparagus become bright green, about 1-2 minutes.
  4. Add the honey mixture, tamari soy sauce, and rice vinegar and continue to cook for another 2 to 3 minutes to ensure chicken is thoroughly cooked, sauce will thicken.
  5. Remove from heat and season with additional salt and pepper to taste. Serve with a lime wedge.
