Garlicky Asian Bok Choy

Simple & Healthy Bok Choy

Dark greens are among the most nutrient-dense foods everyday foods we can eat. Greens are chock full of bone building nutrients such as calcium, magnesium and vitamin K. This simple recipe will quickly become a go-to for enjoying bok choy, or feel free to substitute with other dark green leafy vegetable such as kale, Swiss chard, collards, turnip greens or mustard greens.

Recipe Ingredients

  • 1 bunch baby bok choy (or approximately 6-8 leaves other greens)
  • 2 tablespoons avocado oil
  • 4-6 cloves garlic, minced
  • 1 tablespoon reduced sodium tamari soy sauce or coconut aminos
  • 2 teaspoons rice vinegar
  • 2 teaspoons toasted sesame oil
  • Optional, sesame seeds

Preparation

  1. Separate the stem of the greens from the leafy portion. Thinly slice the stems, then set aside. Bisect the leaves in half, then stack, tightly roll together, and chop into 1-inch wide pieces.
  2. Heat oil in a medium-sized sauté pan over medium heat and sauté sliced stems with garlic for 2 minutes. Be careful not to get the pan too hot or the garlic will burn.
  3. Add chopped leaves and sauté for 2-3 minutes until they become slightly wilted and vibrant green.
  4. Turn off heat and season with tamari soy sauce or coconut aminos, rice vinegar, and toasted sesame oil.
  5. Garnish with sesame seeds for additional nutrition and flavor!
