This quick and easy breakfast, lunch, or snack is a great way to jazz up your toast with nourishing avocados. Avocados are a wonderful source of the antioxidant, vitamin E, as well as heart-healthy monounsaturated fats. Lemon zest and juice amplify the flavor and add vitamin C. Serve on top of whole grain bread and top with an egg or enjoy with a hard-boiled egg, if desired. Sprinkle with Everything Bagel seasoning for extra flavor and nutrition.

Recipe Ingredients
4 slices 100% whole grain bread
2 ripe avocados
2 teaspoons
lemon zest
2 teaspoons
lemon juice
Salt and pepper to taste
2 radishes, thinly sliced
Preparation
Place bread in the toaster and set to toast for a few minutes until golden.
Meanwhile, remove the pit from your avocado. Use a big spoon to scoop out the flesh. Place in a bowl and mash together with lemon zest, lemon juice, salt, and pepper until it’s as smooth as you prefer.
Spread the avocado mixture onto toast and garnish with thinly sliced radishes.
