The natural sweetness of pineapple and apricots balance tart cranberries, and all it takes is some time for soaking and processing. Use this spread as a breakfast jam, a topping for dairy-free yogurt or hot cereal, or a base for a fruit vinaigrette salad dressing.

Recipe Ingredients

  • 3/4 cup unsweetened pineapple, dried
  • 6 apricots, dried
  • 1/2 cup cranberries, dried (see note below)
  • 1/2 cup unsweetened pineapple juice
  • 1 tablespoon lime juice

Cooking Instructions

  1. Combine dried fruits in a bowl and cover with pineapple and lime juices. Soak for 30 minutes.
  2. Place all ingredients in a food processor and purée until smooth.
  3. NOTE: Instead of cranberries, try dried cherries or a pomegranate-infused berry for even more variety.
