Don’t be tempted to use bottled lime juice (too much sugar) or dried mint, which never has the aromatic oils of fresh leaves and stems— that’s right, never waste the stems. Flavor-rich marinades are a simple way to enhance chicken without adding salt or sugar-filled dressings.

Recipe Ingredients

  • 8 (4 oz.) chicken breasts
  • 1 medium yellow onion, chopped
  • 1 tablespoon lime zest
  • 1 teaspoon brown sugar
  • 1/4 cup lime juice
  • 1 tablespoon fresh garlic, chopped
  • 3 tablespoons fresh mint, chopped
  • 1/4 teaspoon Spanish paprika
  • 1 jalapeno, seeded and chopped

Instructions

  1. Follow the prep technique next to each ingredient.
  2. Preheat oven to 350˚F.
  3. In a food processor combine the ingredients except the chicken and blend well. Pour over chicken and marinade for at least 2 hours. On a sprayed sheet pan, roast the chicken for 15 minutes or until its internal temperature reaches 165˚F.
