Recipe Ingredients

  • 1 1/2 cups walnuts, finely ground
  • 1 cup whole wheat pastry flour, spooned lightly into measuring cup
  • 1/3 cup flaxseed meal
  • 1/2 teaspoon salt
  • 1/3 cup dried cranberries, cacao nibs, or dried date pieces
  • 1/2 cup maple syrup
  • 1/4 cup soy or almond milk
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 375°F.
  2. Stir together dry ingredients and set aside.
  3. Combine liquid ingredients and add to dry ingredients. Mix well.
  4. Place walnut-size mounds on a cookie sheet covered with parchment paper or a silicone pad. Flatten to desired thickness.
  5. Bake 10–12 minutes, until brown on edges or to desired doneness. Place cookies on wire racks to cool.
