Recipe for Cashew Chicken-Style Gravy

Recipe Ingredients

  • 1/4 cup diced onion (optional)
  • 3 medium mushrooms, sliced (optional)
  • 2 cups hot water, divided
  • 1/2 cup raw cashews
  • 1 tablespoon nutritional yeast flakes
  • 1 tablespoon Chicken-Style Seasoning
  • 1 tablespoon cornstarch
  • 2-3 teaspoons low-sodium soy sauce, to taste
  • 1 1/2 teaspoons onion powder
  • 1/4 teaspoon celery salt

Instructions

  1. If you’re using onions and mushrooms, sauté them in a small amount of water or vegetable broth until tender. (You can use the same saucepan for cooking the gravy; just set the mixture aside and continue with gravy directions.)
  2. Combine 1 cup hot water and cashews in blender. For ease of blending and a creamier texture, let cashews soak 10 minutes.
  3. Place remaining ingredients in blender.
  4. Blend mixture until smooth as cream. Pour into saucepan, rinse blender with remaining cup of hot water, and add rinse to the saucepan.
  5. Cook over medium heat, stirring constantly until bubbly and thickened. Turn off heat, cover, and set aside until needed.
