Recipe for Cashew Cream Sauce

The mild flavor of cashews and their ability to blend to a cream make this sauce versatile and one that can be used as a white sauce or gravy. This sauce also makes a great base for creaming potatoes or vegetables. Adjust seasonings to taste and to suit the type of entrée or other dish you’re using it with. For a lower-fat version, reduce nuts to ⅓ cup and increase flour to 1 tablespoon plus 2 teaspoons.

Recipe Ingredients

  • 1 cup hot water
  • 1/2 cup raw cashews
  • 1 teaspoon whole wheat pastry flour
  • 1 1/2 teaspoons Chicken-Style Seasoning
  • 1/8 teaspoon salt or to taste
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon celery salt
  • 1/2 cup hot water

Instructions

  • Combine all ingredients (except last ½ cup water) in blender. If you don’t have a strong blender, wait a few minutes before blending to allow the nuts to soften.
  • Release blender vent (so hot water will not push off the lid) and blend until nuts are smooth as cream with no grittiness.
  • Add remaining water and blend briefly to mix.
  • Pour into small saucepan and stir over medium heat until thickened.
