Breakfast Hearty and Delicious

A Crusty Whole Wheat Baguette makes the best French toast, but day-old or “stale” bread of any kind will work. Moist or fresh bread does not work well, but if that is all you have, put slices on a cookie sheet in a 300°F oven for 10 minutes (5 minutes on each side) to dry them out a little. This recipe uses one Crusty Whole Wheat Baguette.

Recipe Ingredients

  • 1 cup water
  • 1/2 cup raw cashews
  • 1/3 cup flour (whole wheat pastry flour works well)
  • 1/4 cup moist dates
  • 2 tablespoons flaxseed meal
  • 2 tablespoons orange juice concentrate
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1/4 teaspoon cinnamon (optional)
  • 3/4 cup water
  • Crusty Whole Wheat Baguette, or other whole wheat bread

Instructions

  1. In blender, combine all ingredients except last ¾ cup water and bread. Blend until smooth and creamy.
  2. Add remaining water and blend to mix.
  3. Pour mixture into a shallow dish.
  4. Heat nonstick skillet to medium-low heat.
  5. When droplets of water sizzle in the frying pan, dip bread into batter and begin cooking. Be careful not to flip too early or the batter will pull away from the bread. Brown both sides and serve.
