Super Simple and Gluten Free

This super-simple, gluten-free recipe doesn’t require much work. In fact, these cookies only have three ingredients! If you’re not planning to use them right away, wait until they are completely cooled and store them in a freezer-safe container. With this method, the cookies will retain their original crispness when you are ready to serve them. Be sure to remove them from the container before defrosting them. This perfectly chewy yet crisp treat pairs well with a hot drink on a cool day, or try one topped with your favorite nondairy vanilla ice cream.

Recipe Ingredients

  • 3/4 cup almonds, chopped
  • 3 tablespoons almond flour or meal
  • 1/4 cup maple syrup

Instructions

  1. Preheat oven to 325°F.
  2. Combine ingredients, mixing well.
  3. Spoon 1½ teaspoon amounts onto parchment-lined cookie sheet. Press lightly to flatten—you may need to lightly dampen your fingers.
  4. Bake 12–15 minutes or until edges are slightly browned.
  5. Remove from oven and slide parchment onto cooling rack.
  6. Cool completely before carefully removing cookies.

NOTE: For additional flavor, mix ¼ teaspoon vanilla with the maple syrup.
