Recipe for Classic Holiday Green Beans

Recipe Ingredients

  • 1 pound green beans, trimmed
  • 12 ounces crimini mushrooms, sliced
  • 1 tablespoon garlic, minced
  • 1 cup yellow onion, diced
  • 1 cup fat-free half and half, divided
  • 1 ½ teaspoons black pepper
  • ½ teaspoons salt
  • ¼ teaspoons nutmeg
  • 1 tablespoon cornstarch
  • 1 tablespoon butter (or water)

Instructions

Vegetables

  1. Wash and prepare vegetables as instructed above.
  2. In a medium pot, steam green beans in water for 6-8 minutes.
  3. In a separate pan while the green beans are cooking, sauté the mushrooms in butter or water until soft.
  4. Add the onions and garlic to mushrooms. Continue sautéing until softened.

Sauce

  1. In a small bowl, make a slurry mixture using 3 tablespoons of half and half with the cornstarch. Stir well to combine and set aside.
  2. Pour the remaining half and half into a small saucepan and heat on medium-low.
  3. Add black pepper, salt and nutmeg.
  4. Bring sauce to a simmer and add the cornstarch slurry to thicken.

To serve, place cooked green beans and mushrooms in a serving dish and pour sauce over to combine.
