A Bite of Chewy, Sweet Goodness

Not only are these cookies filled with fiber, protein, and heart-healthy benefits; they’re a fun treat served warm out of the oven. Prep them to the cookie-sheet stage and then set them aside while you fix your meal. As you sit down to eat, place them in a preheated oven so everyone can enjoy a fresh baked cookie to finish off their dinner.

Recipe Ingredients

  • 2 cups unsweetened macaroon coconut
  • 1 1/3 cups tiny, dried date pieces
  • 3/4 cup cacao nibs
  • 1/3 cup whole wheat pastry flour
  • 3/4 cup chopped walnuts
  • 3 tablespoons dry quick oats
  • 1/4 teaspoon salt
  • 1/3 cup orange juice
  • 1/3 cup peanut or almond butter
  • 1/3 cup maple syrup
  • 1 tablespoon water
  • 1 teaspoon vanilla

Instructions

  1. In a mixing bowl, combine all dry ingredients.
  2. Combine liquids and add to dry ingredient mixture.
  3. Prepare cookie sheet with parchment or silicone pad.
  4. Bake at 350°F for 12–15 minutes.

NOTE: If you cannot find tiny date pieces, chop up some larger ones. If the date pieces are too hard and dry, soak them briefly in hot water and then drain.
