Recipe for Double Dark Chocolate Granola

Breakfast A Morning Indulgence

Healthy but decadent, this crunchy, chocolatey granola is delightful and special enough to serve for breakfast in bed. Top with your favorite berries for a delectable cereal or use as a topping for your favorite plant-based yogurt, smoothie, or ice cream! Besides, who wouldn’t be excited about chocolate for breakfast?

Recipe Ingredients

  • 2 cups rolled oats
  • 2 cups quick oats
  • 1/2 cup wheat germ
  • 1/4 teaspoon salt
  • 1/4 cup light olive oil
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/3 cup cocoa powder
  • 1/2 cup coconut flakes
  • 1/2 cup dark chocolate chips or chunks (optional)

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
  2. Mix oats, wheat germ, and salt in a large bowl. Add liquids and stir until completely combined.
  3. Sprinkle on cocoa powder and mix well until ingredients are evenly coated.
  4. Stir in flaked coconut.
  5. Spread evenly on prepared baking sheet.
  6. Bake 20 minutes, stirring after 10 minutes.
  7. Allow granola to cool completely, then stir in chocolate chips or chunks (if using).
  8. Store in an airtight container and enjoy!

NOTE: You can substitute carob powder and chips for the cocoa and chocolate chips, if desired. Remember that carob is sweeter than cocoa, so you may want to decrease the sweetener to taste.
