This fresh cucumber relish is a great side dish when serving burgers or similar foods, a healthy replacement for pickles that contain many additives. This relish makes a perfect addition to a summer picnic, potluck, or barbecue.

Recipe Ingredients

  • 1 1/2 cups unpeeled cucumbers, thinly sliced
  • 3/4 cup onion, thinly sliced
  • 1/4 cup green pepper, thinly sliced
  • 1 teaspoon dried dill weed
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons sweetener of choice
  • 1/3 cup cold water
  • 1/3 cup lemon juice

Instructions

  1. Layer vegetables, dill, and garlic in a glass container.
  2. Dissolve salt and sweetener in liquids.
  3. Pour liquid ingredients over the vegetables.
  4. Seal with a lid and marinate 24 hours.
