Recipe Ingredients
- Combination #1 (two 1½-cup servings):
- 2 cups crisp Romaine lettuce, chopped
- 1 cup baby spinach leaves
- 1/4 cup cucumber, sliced
- 2 tablespoons red onion, quartered and sliced
- 1/4 cup red cabbage, finely shredded
- 1/3-1/2 cups avocado, diced
- Lemon-garlic dressing, to taste (recipe below)
- Combination #2 (three 1¼-cup servings):
- 2 cups crisp Romaine lettuce, chopped
- 1 cup baby spinach leaves
- 1/4 cup cucumber, sliced
- 2 tablespoons fresh green onion, sliced into ¼-inch pieces
- 1/3-1/2 cups garbanzos, cooked and drained
- 1/3 cup black olives, sliced
- Light sprinkling of crushed, dried oregano (optional)
- Cherry tomatoes, halved, to decorate top
- Lemon-garlic dressing, to taste (recipe below)
- Lemon-Garlic Dressing:
- 1 teaspoon fresh lemon juice, to taste (Combo #2 will need more than Combo #1)
- 1/2 teaspoon coarse ground garlic salt with parsley
