Low-Fat and Versatile

Silken tofu quickly takes on a yogurt-like consistency when treated this way. It’s a very versatile ingredient. This low-fat preparation loses none of the rich flavor of classic French toast, and would be a welcome addition to any breakfast or brunch table topped with pear and date sauce or fruit salsa. (French toast, by the way, isn’t actually French, but has been written about in one form or another since Imperial Rome.)

Recipe Ingredients

  • 8 ounces silken tofu
  • 1 tablespoon honey
  • 1 whole egg, large
  • 12 slices whole grain bread
  • 3/4 cup 1% milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

Instructions

  1. In a food processor or blender mix all ingredients, except the bread and set aside in a bowl. Cut bread or simply use already sliced whole grain bread. Soak each slice of bread into the mixture, coating both sides and placing them on a prepared sheet pan with cooking spray.
  2. Bake for 5 minutes and then flip them over and bake for 3 more minutes or until golden.
