Chipotle peppers are actually the old familiar jalapeño, slow dried in smoke for a heat that is more warming and flavorful than painfully hot—but make no mistake, there is a pleasant kick to this protein-and vitamin-rich dip, tempered by the yogurt and tofu, that great master of absorbing flavors. Try spreading this on a sandwich for an interest-getting alternative to mayonnaise.

Recipe Ingredients

  • 1 block firm tofu
  • 1/2 cup roasted red bell pepper
  • 1 teaspoon fresh garlic, minced
  • 1 teaspoon chipotle pepper in adobo
  • 1 tablespoon lemon juice
  • 3 tablespoons fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 1/4 tablespoons apple cider vinegar
  • 1/2 teaspoon kosher salt
  • 2 pinches nutmeg
  • 6 tablespoons nonfat yogurt
