Banana Oat Muffins with Flax Seed
These muffins are full of fiber and are a great breakfast addition or snack.

Recipe Ingredients

oat flour
- 1 1/4 cups
rolled “old-fashioned” oats
- 2 tablespoons
ground flax seeds (aka flax meal)
- 2 teaspoons
ground cinnamon
- 1 1/2 teaspoons
baking powder
- 1 teaspoon
baking soda
- 1/2 teaspoon
sea salt
- 1/2 cup
chopped walnuts (optional)
- 1 cup
plus 2 tablespoons mashed banana (approximately 2-3 ripe bananas)
- 1/4 cup
avocado oil or olive oil
- 1/2 cup
pure maple syrup
- 1 egg
- 1/3 cup
milk or unsweetened plant-based milk
- 1 teaspoon
pure vanilla extract
